I vote for black! I think the red will be too much considering the outside is already a red tone. BUT, it wouldnt look horrible. Some of the old 60's red mustangs had red interiors but I always liked the black ones better. The black interior would make the exterior color pop more, in my opinion. Look forward to seeing it either way!

Hey, check this video out, its a white RT40 with red interior, gives you an idea of what it might look like. Looks good on a white car...
